Is-Serkin is something of a Maltese institution and pilgrimage site for lovers of pastizzi — the flaky, savory pastry parcels filled with ricotta or mushy peas that are the ultimate Maltese street food. Open 24 hours a day, 7 days a week, Is-Serkin draws queues of locals at all hours, from early-morning workers to late-night revellers who have discovered that nothing cures hunger quite like a freshly baked pastizz at 3am. At just 50 cents each, this is Malta's most democratic and most beloved food experience. The ricotta version is creamy and subtly sweet; the peas version is earthy and satisfying.
